I’ve been obsessed with these pancakes lately and have made them a part of my meal prep this past week. They have a good amount of protein in them (22 grams) and so yummy! If I’m meal prepping them then I double or even triple the recipe.
Ingredients:
- 1/3 cup nonfat cottage cheese
- 1/3 cup egg whites
- 1/3 cup old fashioned oats
- Cinnamon and vanilla to taste
- Sugar free syrup on top
Directions:
Blend ingredients in a blender. Pour onto a pan over medium heat. Makes 3 pancakes. I top them with sugar free maple syrup and serve with a side fruit like strawberries, blueberries or a banana.
